Ingredients of Broccoli Soup

  1. It's 2 of broccolis.
  2. You need 2 of white onions.
  3. Prepare 4 of potatoes.
  4. It's of Spinach.
  5. Prepare of Cheese.
  6. You need 1.6 L of vegetable stock.
  7. You need 2 tbsp of salted butter.
  8. It's of Salt.
  9. You need of Pepper.
  10. It's of Parsley.
  11. Prepare of Fresh bread to serve.

Broccoli Soup instructions

  1. Chop broccoli.
  2. Finely chop the potatoes and onions into small, thin batons.
  3. Heat large pan with vegetable oil, add onions and potatoes, fry for 10mins.
  4. Grate cheese.
  5. Add butter, broccoli, salt and pepper to pan, fry for 5mins.
  6. Add vegetable stock, bring to boil, cover and simmer for 15mins.
  7. Remove from heat and blend.
  8. Add spinach and blend.
  9. Return to heat, add grated cheese and stir until dissolved.
  10. Season with salt and pepper, simmer until desired thickness is achieved.
  11. Top with black pepper and parsley before serving alongside fresh, toasted bread.
