Ingredients of Loaded Broccoli & Cheese Soup

  1. Prepare 2-14.5 oz. of cans of chicken broth.
  2. You need 2-8 of - oz. of mild cheddar cheese.
  3. You need 8 of - Small to medium potatoes (Idaho Reds are nice).
  4. You need 1 Bag of small carrots.
  5. Prepare 2 of - Tsp of onion powder.
  6. You need 3 of - Small heads of broccoli.
  7. Prepare 5 of - Tbs. of butter.
  8. It's 1/3 of - Cups of flower.
  9. It's 4 of - Cups of milk.
  10. It's 1 of - Tsp. of salt.
  11. It's 1 of - Tsp. of garlic pepper.

Loaded Broccoli & Cheese Soup step by step

  1. In a large pot combine chicken broth, carrots, potatoes and onion powder..
  2. Bring to a boil, cover and let simmer for about 10 minutes.
  3. Add broccoli, cover and simmer for an additional 10 minutes.
  4. While simmering, melt butter in a large sauce pan, whisk in flour and cook until golden brown.
  5. Whisk in milk and cook until sauce thickens (about 15 minutes).
  6. Add cheese and stir until it's all melted, add salt and garlic pepper.
  7. Pour cheese sauce into large pot of chicken broth and broccoli stir until combined.
  8. Add more milk to get a more thinner consistency and additional salt and garlic pepper to taste.

Preptime: 32 Minutes

Cooktime: 54 Minutes

Serve: 3 Persons
