  2. Prepare 115 g of plain flour.
  3. Prepare 1 tbsp of icing sugar.

  7. You need of Raspberry Jam.
  8. It's 100 g of raspberry purée.
  9. Prepare 2 tbsp of sugar.
  10. It's of Juice of half lemon.
  11. Prepare of Chocolate ganache.
  12. It's 100 g of dark chocolate.
  13. It's 100 ml of cream.
  14. You need 20 g of butter.
  15. It's of Decoration.
  16. Prepare of Cocoa butter.
  17. You need of Freeze dried Raspberry.
  18. Prepare of Chocolate pearls.

  1. For the pastry, place flour, salt and sugar in a stand mixer bowl and stir till combined. With a flat beater attached, add in cold butter dices and mix till the butter crumbles into the flour. Add water and mix till the dough comes together. Wrap the dough in plastic wrap and chill for 10 mins..
