Ingredients of Simple Carrot Cake

  1. It's 2 cups of flour.
  2. Prepare 2 tbsp of baking powder.
  3. You need 2 tbsp of baking soda.
  4. You need 1 cup of sugar.

  6. You need Handful of blueberries.

  10. Prepare 4 of eggs (separate the yolk and the whites).

  1. Mix all dry ingredients together (flour, baking powder and soda).
  2. In a separate bowl, mix the wet ingredients (sugar, oil, mala, yolks).
  3. Whisk the egg whites till they have a stiff peak..
  4. Add the wet mixture to the dry mixture and stir till it all comes together- don't over mix. It is okay to have a few lumps..
  5. Pre- heat your oven at 200° c for 15 min..
  6. As the oven is preheating, add your egg whites to the cake batter and softly stir in one direction.
  7. Line your baking pan/ put oil and softly dust with flour. Pour the cake mixture into the pan..
  8. Put pan in oven and reduce heat to 180° C for 20 minutes. Check if it is well done by inserting a tooth pick- it should come out clean with no cake residue..
