Classic French Onion Soup

Ingredients of Classic French Onion Soup

  1. Prepare 400 gram of white onions.
  2. You need 1 of dollop of unsalted butter.
  3. It's 300 ml of vegetable/chicken stock.
  4. Prepare as needed of Mixed Herbs.
  5. It's 1 of Bay leaf.
  6. It's to taste of Salt and crushed black pepper to season.
  7. You need 300-350 gm of grated gruyere/parmesan cheese.
  8. You need Slices of French Baguette to top.
  9. It's 2 tablespoon of plain flour.
  10. Prepare 1 tablespoon of Apple cider vinegar/1.5 tablespoon white wine.

Classic French Onion Soup step by step

  1. Peel and slice the onions thin and lengthwise.
  2. Melt the butter in a pot.
  3. Add and sauté the onions on low heat.
  4. Keep stirring in between as the onions brown to avoid burning them.
  5. Meanwhile, bring the stock to a boil in another vessel and add the herbs and Bay leaf.
  6. Strain the stick after 3-4 minutes.
  7. Once visibly brown, add the flour and mix for a few seconds.
  8. Next goes in the cider vinegar/ wine.
  9. Add and sauté the onions for a few seconds.
  10. Add the stock and bring to a boil.
  11. Reduce heat and allow the soup to simmer while you season it with salt and pepper.
  12. Mix and take off heat.
  13. Spoon the soup equally into oven safe bowls.
  14. Top with baguette slices and spread a generous amount of cheese covering the surface well.
  15. Microwave till the cheese melts / even browns a bit.
  16. Let the bowl cool off slightly till you can handle it.
  17. Serve while the soup is warm. Enjoy!.
