Ingredients of Roasted tomatoes and goat cheese

  1. You need 6 medium of Zima tomatoes (sweet tomatoes).

  4. It's 1/4 tsp of Italian seasoning.
  5. Prepare 1/4 tsp of Parsley flakes.

  1. Preheat oven to 400°F.
  2. Wash, dry and cut tomatoes in half..
  3. Add spices, garlic, tomatoes and olive oil to bowl, stir..
  4. Put all tomatoes in small oven safe bowl. Drizzle extra olive oil and spices on top..
  5. Roast in oven for 10 minutes, stir again, ensuring all tomatoes are covered in olive oil..
  6. Roast for another 10 minutes..
  7. Let cool in fridge, add goat cheese and optional mushrooms. Enjoy!.
