Ingredients of Healthy Okara & Rice Flour Cocoa Cookies

  2. Prepare 40 grams of Rice flour (Joshinko or rice flour for baking).

  4. Prepare 20 grams of Processed cocoa.

  6. It's 2 tbsp of Soy milk (or regular milk).

  1. [Prep] Preheat the oven to 170°C..
  2. Combine the fresh okara, rice flour, cocoa and sugar in a bowl and give everything a quick stir together. If you measure everything straight into the bowl you'll save on washing up later..
  3. Pour in the olive oil and give everything a mix. The mixture will turn a bit crumbly but don't worry if the dough doesn't start to come together yet..
  4. Add in the milk and mix again. Once the dough comes together, it's ready. If it's not coming together well, add some more oil..
  5. Form the dough into a tight ball..
  6. Bake the cookies for 30 minutes at 170°C. The outside will be nice and crunchy and the inside will end up deliciously chewy! They're done..
