Quick "no waiting" wholemeal bread

Ingredients of Quick "no waiting" wholemeal bread

  1. It's 120 g of wholemeal flour (I used strong bread flour).
  2. It's 100 g of rye flour.
  3. You need 30 g of oats.
  4. It's handful of flax seeds.
  5. Prepare half of a heaped tsp bicarbonate of soda.
  6. Prepare half of a heaped tsp salt.
  7. It's 1 tablespoon of honey.
  8. You need 200 ml of milk (could use oat milk to keep it dairy free).
  9. You need half of teaspoon lemon juice.

Quick "no waiting" wholemeal bread step by step

  1. Put oats into a blender (I used my nutri ninja) and blend to a fine flour. Alternatively, you could leave them whole or coarsely blended if you like a more coarsely textured bread..
  2. Add oats to the wholemeal and rye flours with the salt and bicarbonate of soda and mix. Add the flax seeds and mix again..
  3. Warm the honey in the microwave for 20 seconds on medium..
  4. Add the lemon juice to the milk in a jug. Add the honey and stir well..
  5. Make a well in the flour mix and pour in milk/ honey mix. Use your hands to mix until it forms a dough. It should be soft and quite sticky at this point..
  6. Place your ball of dough onto a greased baking tray. Cut a cross into the top of the dough and sprinkle it with a handful of oats..
  7. Cook in a pre-heated oven at 200 for 25 minutes until browned. If the bread sounds hollow when tapped on the bottom then it is cooked. If not, turn down the oven to 160 and leave for a further 10 minutes. When cooked, wrap in a clean tea towel to cool before slicing..
