Ingredients of Crustless Leek Quiche with blue cheese and chillies

  2. It's 100 gr of Blue Cheese.
  3. You need 1 of large onion.
  4. Prepare 4 of medium size leeks.
  5. Prepare 1 of pot natural yoghurt.
  6. It's of olive oil.
  7. You need of salt and pepper.
  8. It's 1 handful of garden herbs (I used mint, basil, parsley and rue).

Crustless Leek Quiche with blue cheese and chillies step by step

  1. Wash and cut leeks and onion and gently sauté in a little oil.
  2. Chop the fresh herbs.
  3. Put the leek and onion mixture in a bowl and add the herbs.
  4. Add the blue cheese and stir in well..
  5. Add the eggs and whisk in.
  6. Add the yoghurt, mix well. Add a pinch of salt and a few grinds of pepper and stir.
  7. Pour the mixture into an oven dish. Top with the green chilies and put in the oven 190º 25 mins.
  8. Enjoy!!! I served with a tomato, onion and avocado salad with a lime juice and olive oil dressing..
